Kelly Walsh Perfected His Secret Walla Walla Sweet Onion Sausage Recipe!
Part of the secret is using fresh lean pork and those delicious Walla Walla Sweet Onions. It also makes them unique to our area, and a local favorite!
There are some other spices in there too, but that part is a family secret.
All the spices are hand ground the day the sausage is made. Walla Walla Sweet Onions are frozen during the season so we can make the sausages year round.

Cooking them up on the grill
If you're in the area and can make it to an event or the Farmer's Market you can experience a Walla Walla Sweet Onion Sausage hot off the grill.
We use charcoal briquettes that have been ignited using a newspaper starter, (no starter fluid to mess the taste up!) and once the coals are hot, cooks each sausage until browned.
The final step is testing each one with a stem thermometer. They don't come off the grill until the internal temperature has reached 160°
A special note - all Walla Walla Sweet Onion Sausage is made in a ketchup free zone!
If you come by our restaurant at First & Main or see us at the Walla Walla Farmer's Market, please... please don't ask for ketchup!
What you do in your house is your own business, but there will be NO KETCHUP ALLOWED any place we are grilling up the Walla Walla Sweet Onion Sausage! Trust me... it is best that way!
